History for Select Grade Beef (history as of 12/16/2014 16:38:57)

The select grade of beef is the third-highest meat quality grade. This grade is behind prime (highest grade) and choice (second-highest). These grades are determined by the U.S. Department of Agriculture to define the uniform quality of beef and other meats (veal and lamb) in relations of tenderness, juiciness, and flavor.
