Select Grade Beef is the third-highest meat quality grade. This grade is behind prime (highest grade) and choice (second-highest). These grades are determined by the U.S. Department of Agriculture (USDA) to define the uniform quality of beef and other meats (veal and lamb) in relations of tenderness, juiciness, and flavor.
