The term prime grade beef is determined by its composite evaluation of factors that affect tenderness, juiciness, and flavor of meat. These factors include carcass maturity, firmness, texture, and color of lean.  The grade is also determined on the amount and the distribution of marbling within the lean. Beef carcass quality grading is based on degree of marbling and degree of maturity.
