Prime Grade Beef

Prime grade beef is a USDA certification level determined by the beef composite evaluation of factors that affect tenderness, juiciness, and flavor of meat. These factors include carcass maturity, firmness, texture, and color of lean.  The grade is also determined on the degree and the distribution of marbling within the lean and the degree of maturity. USDA-graded beef sold at the retail level is Prime, Choice, and Good.
